Pear, Cranberry and Almond Strudel
2 sheets puff pastry
3 large ripe pears
1 Tbs. baking powder
2 Tbs. butter
1/2 cup dried cranberries
1/2 cup toasted sliced almonds
2-3 Tbs. water
1/2 cup brown sugar
2 Tbs. granulated sugar
1/4 tsp. freshly grated nutmeg
1 egg slightly beaten with 1 Tbs. water
2 Tbs.Cinnamon sugar


Thaw puff pastry in the refrigerator. Pare and core the pears, chop into rough chunks, approximately 1/2 inch square. Over medium heat, melt the butter; add the pears and cranberries. add 2 Tablespoons of water. Sprinkle with the sugars and spices. Stir gently while cooking. If the mixture appears too dry, add more water, but be careful not to make the mixture too wet. Cook uncovered for about 5 minutes, or until the pears are softened. Allow to cool. Place the thawed puff pastry flat on a floured surface. Distribute the pear mixture over the pastry to within 1" of the sides. Gently roll up from the long side of the dough. Pinch edges and bottom closed. Place on a parchment lined baking sheet. Place in the refrigerator for about a half hour to re-chill the dough. Preheat oven to 400 degrees F. Brush the top with egg mixture. Sprinkle with cinnamon sugar. Bake for 25 minutes or until golden brown. Cool slightly before cutting to serve. Serve with Creme Anglaise or Whipped Cream.

Almond Creme Anglaise
1 1/2 cups heavy cream
1/2 cup sugar
3 large eggs
1/4 cup Amaretto (or 1-2 tsp. almond extract.


Heat heavy cream in a medium saucepa er medium heat until small bubbles appear around the edges of the cream. Di not allow cream to come to a full boil. While cream is warming, use a mixer to whisk eggs and sugar until light and thick. Slowly add the warm cream to eggs while continuing to whisk on low. Return cream/egg mixture to saucepan and cook over medium-low heat, stirring constantly until thickened and coast the back of a spoon. Remove from heat and cover top with plastic or wax paper. Refrigerate until chilled.
Egg and Asparagus Roulade
4 oz goat cheese
3/4 cup milk
2 Tbs. all-purpose flour
1 tsp. salt
1/2 tsp. pepper
2 Tbs. of fresh herbs (tarragon, parsley, thyme)
12 eggs
1/2 cup diced green onion
2 1/4 cup shredded cheese, divided
16-20 asparagus spears, cooked
1 1/2 cup of cooked ham cubed. (optional)
Hollandaise Sauce


Line the bottom and sides of a greased 15x10x1" baking pan with parchment paper, spray the paper with non-stick spray. Set aside. Preheat oven to 375 degrees F. Whisk togeter goat cheese, milk, flour, salt, pepper and eggs until well blended. Stir in the fresh herbs. Pour into a prepared pan. Bake for 15-20 minutes until puffed and set. Remove from oven and let set for 5 minutes. Spread mustard directly on baked eggs. Spread eggs with half of cheese. Arrange asparagus spears parallel with long side of egg. Spread ham, if using, over asparagus. Cover with remaining cheese. Roll from long side. Return to the oven for another 5 minutes. Remove from oven and allow cheese to set (5 minutes) before slicing. Serve with Hollandaise Sauce.
